THE SOLUTION
The project began with an in-depth market study, analyzing Brussels' local dining scene, museum food experiences worldwide, and emerging culinary trends within cultural spaces. This insight provided a foundation to shape Kanal’s F&B approach. After thorough evaluation, including a financial study by a renowned consultancy, a hybrid model was identified as the best fit: a central kitchen for base preparations paired with individual chefs and concepts for each venue. This setup enables streamlined supplier management and traceability while allowing each venue to maintain its unique identity. Working closely with architects, we then optimized bar and kitchen layouts to support smooth workflows and maximize space. With opening day approaching, the focus now will be on curating concepts for each outlet, ensuring a clear, strategic roadmap for a sustainable, culturally enriched dining experience at Fondation Kanal.
